Jollof Rice
  • 2 cups long-grain parboiled rice
  • 1/4 cup vegetable oil
  • One large onion, chopped
  • Three large tomatoes blended
  • One red bell pepper blended
  • One scotch bonnet pepper blended
  • Two tablespoons of tomato paste
  • 2 cups chicken broth
  • One teaspoon thyme
  • One teaspoon of curry powder
  • Salt to taste
  • Two bay leaves
  • 1 cup mixed vegetables (optional)
  1. Heat the oil in a large pot over medium heat. Add the onions and sauté until translucent.
  2. Add the blended tomatoes, red bell pepper, scotch bonnet pepper, and tomato paste. Cook for about 10 minutes, stirring occasionally.
  3. Add the chicken broth, thyme, curry powder, salt, and bay leaves. Bring to a boil.
  4. Stir in the rice, reduce the heat to low, and cover the pot. Cook for 20-25 minutes or until the rice is tender and the liquid is absorbed.
  5. If using mixed vegetables, stir them in during the last 5 minutes of cooking.
  6. Remove the bay leaves and fluff the rice with a fork. Serve hot.
